Flourless Chocolate, Orange & Almond Cake
Rich, fudgy and naturally gluten free, this flourless chocolate cake combines dark chocolate, almond meal and fresh orange for a dessert that feels indulgent without being overly sweet.
It’s the kind of cake we can imagine enjoying slowly at Lovestone — warm from the oven, with a cup of freshly brewed coffee in the afternoon or paired with a glass of red wine beside the fireplace. 🤍
Serves
8–10
Ingredients
- 200g good-quality dark chocolate, roughly chopped
- 150g unsalted butter
- ¾ cup caster sugar
- 4 large eggs
- 1½ cups almond meal
- ¼ cup unsweetened cocoa powder
- 1 tsp vanilla extract
- Zest of 1 large orange
- 2 tbsp fresh orange juice
- ½ tsp baking powder
- ¼ tsp sea salt
To serve
- Icing sugar, for dusting
- Fresh orange zest
- Fresh berries or orange segments
- Whipped cream or vanilla ice cream, optional
Method
1. Prepare the oven
Preheat your oven to 170°C (150°C fan-forced).
Grease a 22cm round springform cake tin and line the base with baking paper.
2. Melt the chocolate
Place the chopped dark chocolate and butter in a heatproof bowl over a saucepan of gently simmering water.
Stir occasionally until completely melted and smooth. Remove from the heat and allow to cool slightly.
3. Whisk the eggs
In a large bowl, whisk the eggs and caster sugar for 2–3 minutes until slightly pale and creamy.
Add the vanilla, orange zest and orange juice.
4. Combine
Slowly pour the melted chocolate mixture into the egg mixture, stirring gently until combined.
Fold through the almond meal, cocoa powder, baking powder and salt until just incorporated.
Don’t overmix — you want to keep the mixture light.
5. Bake
Pour the mixture into your prepared cake tin and smooth the top.
Bake for approximately 30–35 minutes, or until the edges are set but the centre still has a slight wobble.
The cake will continue to firm up as it cools, so don’t worry if the middle looks slightly underdone.
6. Cool
Allow the cake to cool in the tin for around 15 minutes before carefully removing it.
For an extra fudgy texture, allow it to cool completely before serving.
7. Finish
Dust lightly with icing sugar and finish with fresh orange zest.
Serve with fresh berries, whipped cream or a scoop of vanilla ice cream.
